Machine espresso uses precision pressure and mind-blowing filter technology to make the perfect cup of coffee. How exactly does it work?

The process is similar to making drip coffee. However it is the pressure that makes the main difference.

The Head of the Group

As the name implies, the group head is the place you put your portafilter in when brewing espresso. It disperses the water into the portafilter and regulates the pressure during the extraction. There are many different types of group heads each with its own advantages and disadvantages. Some are designed to provide stability of temperature while others are built to handle pre-infusion. Others are made to control the lever. Some include a mix of features, like the E61 that is the most popular choice among baristas because of its ability to offer multiple perks in a single package.

As you can see from the picture above the group head is equipped with several notches. The portafilter is placed inside these notches, and then turn the head around to secure it. There is also a gasket made of rubber that is a part of the notches and helps create an airtight seal when you insert your portafilter into the machine. The notches permit an exact placement of the portafilter. This is crucial for an even extraction.

In addition to allowing you easily connect your portafilter, the group head is also responsible to ensure that the temperature remains even. It does this by circulating hot water through the brew basket and around the portafilter, ensuring that it is always at the right temperature to extract. It is important to remember that even a small differences can make the distinction between a decent and a great espresso.

The Pump

In contrast to piston machines that are manually operated, which rely on a lever to pressurize water, rotating espresso machines rely upon motorized pumps to deliver the nine atmospheric bars of pressure necessary to extract cheap espresso machine. The pressure builds up by drawing tap water from a reservoir, and pumping it through a heat exchanger before it is shot through the ground coffee in the group head.

Pumps tend to be more affordable and last longer than piston-driven machines. However, both kinds of machines may degrade because of excessive use and insufficient cleaning. Pumps are also more complex mechanically, which could increase the cost of even the simplest models.

Some espresso machines use steam pressure instead of a pump to make espresso. The drawback is that the boiler that produces steam also increases the temperature of the water to boiling which can cause excessive extraction. These machines also have to continuously rebuild their pressure between cups. This requires energy and time.

Both models can make a great espresso, but the rotary models are quieter and more durable than vibration pumps.

The Boiler

The boiler is what is used to heat the water to the ideal temperature to extract. The resultant steam then reaches the portafilter, which contains the ground espresso and is then pumped into the cup. During this process the steam generates enough pressure to push the grounds of the coffee through. This creates a foam on top of the espresso. This is one of the main characteristics of a good espresso.

There are three types of espresso machines, each with different pumps and brew temperature. There are different ways that the brew can be controlled as well as the size of the cup that the machine can make.

The first espresso machines were steam-types. They had one boiler to make both steam and brew however, the pressure they could create was minimal - two bars of atmospheric pressure maximum. This led to the coffee tasting bitter and burnt. The modern espresso machine was invented by the Milanese producers Luigi Bezzerra & Desiderio Pavoni.

The most well-known espresso maker is a semi-automatic machine that has an electric pump. This is what people envision when they think of an espresso machine. Semi-automatic machines require you to grind and tamp your beans yourself, but the pump regulates the flow of water and pressure. This is a great compromise between the human touch and the mechanised consistency.

The Filter

Espresso machines usually have a filter that separates the grounds of the coffee from the hot water. The filter is also an essential part of the temperature control system as it prevents the machine from overheating.

It also helps with flavor, as a filter allows for a longer bloom phase. This allows the beans to release their nuances and gives an opportunity for better extraction.

It is important to keep in mind that even the best ground coffee for espresso machine filter can produce a bad cup of coffee. The quality of the beans as well as the extraction, are still very important.

Steam-driven espresso machines make use of hot water that is heated inside an airtight container to produce steam. The steam then moves hot water through the coffee grounds under high pressure.
